Homemade Spaetzles
Ingredients:
5 cups flour
½ teaspoon of salt
4-eggs
1 cup milk
1 cup water
Beat eggs lightly and add milk and water.
Place sifted flour and salt in a bowl and gradually
stir in the egg mixture.
Mix ingredients together until lumps are gone and it has the consistency of a batter.
Preparation:
Bring about 4 qts. of salted water to a rapid boil.
Spoon a portion of the batter onto an oval plate or cutting board.
With a spoon, begin cutting a small amount of batter from the edge of the plate or cutting board into the boiling water.
Or you can use a spaetzle maker.
Once the spaetzles rise to the surface, they only
take a few minutes to cook.
Remove the cooked spaetzles to a colander to drain. Run under cold water to cool.
